when to pick the pumpkins

a coupe of my sugar pies are all ready nice and orange. Can I pick them now? Will they get riper or larger if the stay on the vine?

      Hunny I have not grown pumpkins but we grew acorn and butternut squash, that are in the same family. I have been harvesting as they show signs of being mature - dark green for the acorn and light tan for butternut. Bakes some already and they were delish. I'd say harvest as they mature. They keep.

          zuke pancakes are delish
          zuke bread/muffins
          Stuffed zukes
          squash blossom soup
          Stuffed squash blossoms
          zuke parmesan
          zuke relish, or "chow chow"
